Each shard is a DiscordClient, so you should be able to iterate through DiscordShardedClient.Shards.[*].Ping
As for uptime... Nothing immediately comes to mind but other devs might have some clever solutions

I have a idea.. couldnt it be internally stored as additional feature in future like DiscordClient.ConnectionTime or something like that

Why don't you hook up to SessionCreated and store it in a singleton class?
Just use a DateTimeOffset and subtract from DateTimeOffset.UtcNow
