What I would recommend doing is checking your start up apps and seeing how many are opening on boot.
If you have an antivirus / antimalware installed, it can utilise a lot of drive time whilst scanning.
I would also recommend checking the drives health using a tool such as crystaldiskinfo which will tell you your SMART readings (such as read/writes and up-time)
I had a silicon power SATA SSD die which began to exhibit similar behaviour (high drive usage) just randomlly.
