I have acknowledged that SLI / NVLink is “dead” for gaming, but I’ve never tried it before, and I want to. (Or dual GPU at least). For rendering, NVLink will be used, for combined memory pool, and for gaming I will be using Lossless Scaling.
I’m pretty sure that the RTX 3090 is similar to the RTX 5070 (in terms of raw power), so even one 3090 would be good.

The anove supoorts sli but thats not necessary to do dual x8

X570 supports 8x and secondary 8x when first PCIe slot is populated. This isn't a brand new build, and I already have my CPU and RAM. I think ill go with the motherboard suggested.
