I have my pc, it's work asome but if i let it open for aprox 1 hr goes in standby and when enter in standby get shut down and it's power on himself with fans at max and no image or something. I need to shut it from wall an than to power up again to work normaly

It could be to do with CPU sleep states.

I have a workstation PC and when I leave it on without doing anything, after about an hour or two it shuts down and restarts by itself. When it restarts, it doesn't take any commands and displays nothing, only the fans run at maximum speed. To make it work again, I have to hold the power button for 10 seconds.

Only things that come to mind are psu or cpu power settings.
Cpu is more likely, since it goes to sleep and doens't power on after doing so.

I have very little experience with server cpus and workstations, I wish someone with better knowledge would chime in. There might be some power options that I don't know about.

It might be a windows issue though. Try disabling standby.
If it's sending the wrong signal to the cpu, then that's what the result looks like.
