I would check the nvidia control panel and see what fps the display is set to
Just turn off vsync and crank the fps to unlimited enjoy 300+fps
It did it for me too for some reason. The way that has always worked for me is to press win+r, typing %appdata%, going to the .minecraft folder and editing the options.txt file. There, almost at the bottom of the file, you can find the resolution. Set that to "1920x1080@144:24", that'll get it to run at 144Hz
