I actually did install it on a separate partition by mounting the installer ISO and then running setup.exe but it won't boot up.

I dont think 7 works with GPT
Windows 7 even if you could get it to work the driver support for modern hardware isn't there normally you would need a lot of work arounds it's not worth it.
And even then why use an EOL OS
ngl if 7 worked better with modern hardware id still use it, i like it way more than 10 but that's just my opinion
and from what i've seen it runs drastically better too as it isn't loaded down with bloatware and telemetry
once 10 goes EOL i'm gonna quit using windows altogether and just go linux
i use arch on nearly everything so i'm quite comfortable with it
I'm trying to use a VHS capture device and Windows 10 has compatibility issues with it.
Thats why I was trying to install Windows 7 on my computer.
Windows 7 has no driver support for current hardware. If you want to run Windows 7, then you will need 7th Gen or older.
What capture device?

DV converter? firewire is pretty reliable if you've got it
composite in quality is also really decent on a high end DVD-recorder too
I have one of those but the problem is that it only works normally with MJPEG
so if you've got one of those with a fw jack

If your current analog video capture not supporting windows 11 then i suggest to buy new capture card than installing windows 7.
and, importantly, it'll work with modern windows. these devices either show up as a universal video input, or cleverly --- a webcam input! super easy to record those, even the win10 camera app will do a decent job, let alone OBS/something fancy
