With that much Information we got from you, your screenshot means nothing
For a Ryzen 7000 CPU those temperatures could be seen as "good"
What kind of cooling do you have (Passive, Aktive, AIO(120,240,360), Custom etcetcetc)?

That's your problem. You have THAT CPU on a 120MM AIO. You need to upgrade your cooling capacity.
im aware is there anything i can do in the meantime? undervolting my cpu?
Nothing that would help without increasing the potential for instability. Just disable precision boost and wait until your replacement comes in.

That would be in bios.
That will essentially lock the CPU to stock voltage and clock ratios
Also what cooler would you recommend?
The Noctua NH-u12S would be perfect. The Be Quiet Dark Rock 3 would be excellent as well.
If you want AIO, then any 240MM AIO would suffice. The 5800X3D won't overclock high anyway
