you know you can hold the mouse button of a standard mechanical or optical in travel just before you actuate it (which would give you bit better response) or get switches with very low actuation point
some mouses do allow you to easily swap switches like screwless
but ofc itās much more comfortable to just control the actuation point in a properietary software

pretravel is the movement when you press on your mouse button/shell and it doesnāt immediately touch and push your switch

like the button or shell is too loose from the switch

yeah pretravel is annoying on main buttons it a lot of the time comes also with the forms of grinding but mainly extra noise and clicking when you lightly tap on your mouse, if pretravel is really high then itās going to be also distracting when just pressing your button
those mices also tend to come with non uniform click consistency so your entire mouse clicks might come up as very cheap feeling and distracting

switch inconsistency is common in cheaper or older switches
tiny defects especially on that small scale are audible
switch slack can also determine the end resulting sound and feel as when the switch is extended (not pressed) it usually has the most amount of slack (the tip being angled a little)
combined with a shell mechanism that doesnāt press exactly vertically on the tip of the switch and the tip moves into place can indeed cause even more noise/feel

on the second there was noticable grind in the right button and pretravel

Given the personal, tactile nature of computer peripherals there is no "perfect" keyswitch. There are only keyswitches that meet your specific needs or preferences. If you're just getting started with mechanical keyboards, I recommend seeing of any electronics shops near you have models on display that you can go feel with your hands.
If there aren't any close by, see if friends might let you fondle their keyboards... with consent, of course! 𤣠Otherwise, the only other thing you can do is a lot of reading online to see what types of switches are out there, then make an educated purchase from a retailer with a good return policy.

Cherry MX was one of the main (and sometimes only, depending on where you live) in the pre-2015(?) days of mechanical keyboards. Then the market exploded with competitors, some of which are copy-cat clones of each other, albeit with dubious quality levels.

TKL (80%) and separate numpad. Additional keys for macros are a positive but not necessarily required. Also might be interested in a configurable knob. These don't need to match, but I'd like them to at least have similar styling if possible.
Electronics:
If there's RGB, an option to turn it off or just be solid white
QMK/VIA compatibility
Wired is preferred. It can have wireless functionality, but functioning when wired is a Must.
Shell:
Definitely not low profile
Probably metal case, but willing to use plastic
Strong preference for the case to at least cover the bottom of the switches.
My ideal color would be in the range of pastel purples or blues, but it's function is more important than aesthetics. Haven't really been a fan of the print detailing that I've seen on the shell itself, but I can be swayed.
Keyswitches and Keycaps:
Reasonably quiet, will be using at work in an office. I think most types of keys should be fine, but I don't want to be a jerk about it.
Mainly tactile keys, mostly light press with slightly heavier on side buttons (enter, shift, Alt, etc) so I don't misclick accidentally
Definitely not side print for the keycals, other than that no strong preference as far as material/color atm. Especially since I can easily swap these out with prettier ones later.
Extra:
More involved modding may be considered in the future, but I don't feel confident enough to do that on my first mechanical keyboard. For now, I only want to have to hotswap keys and key caps from whatever I end up buying. I could work from a barebones kit, but from my understanding fully assembled ones are more cost-effective.
I found the Rainy75 which seems to meet all the criteria that I wouldn't be able to change after the fact, but it only seems to come with linear switches.

Pretty much what you recommended. Evo80, Stars21, 60 of each of the switches, and the Fairy keycaps (both for the main keyboard and numpad). I'll get the Amethyst in a couple of weeks, but that one wasn't as low stock so it was less of a priority.
