You are watching your monitor at 60Hz say. So, it refreshes 60 times each second. Now, suppose one of those times it refreshes out of the 60 times it does, the monitor has a completely black screen. At what refresh rate would you not be able to notice that the monitor had blacked out for a fraction of a second.

Comparing things we make to thifns we know to be perfect manufactors can see how they stack up.

Also much of esports is all about very high fps. And you want a really high HZ. Even if you're only hitting way 500 or 600fps in cs2 or valortent theirs a lot of benefit to having a much higher refresh rate.

Resolution doesn't matter much for that application
