self hosted LLM usually means llama.cpp or ollama as backend, where you install a model you like and can run, and then you communicate with it. Ollama is "simpler" to set up and has a web UI built in.

Keep in mind, that 99% of the time you will be limited by GPU VRAM and GPU FP16 performance - ideally you want something modern (3000 series or newer) and as much VRAM as you can have on that GPU. And then pick a model which fits in that VRAM.
