Technically yes, but noticeably no. Having a GPU for each monitor would mean the one you are gaming on isn't even aware of the other monitors and its not taking up any VRAM, it would be like a 0.01% difference or even less lol, since SLI/Crossfire isn't really a thing anymore.

We've had the technology to make 2 GPUs the size of a normal video card for many many years

From what I have heard, Linux gaming is almost a no-go if you have an Nvidia GPU, its much more stable if you have an AMD GPU gaming wise (which I do), but yeah even then... I wouldn't replace Windows with Linux on my main rig.
