If you're really not going to upgrade the CPU I'd personally grab the 6700xt for 280 pounds and save up for an AM5 chip in the future. With your workload and gaming I don't see you really caring, you'll get 60fps in those games or above even with the 5500

Most of those should be fine, def go for the 6700 xt, just be wary as the 6000 series has had major driver issues in some cases. I had one during a time when they didn't patch a bug with video decoding while in vr, it was awful, patched now after a year tho lol
