like I suspect the CV axle snapping wasn't my fault, it only happened after the car was checked over around 2017(?)

Hard to say but it's probably not a clutch issue. You say it's working fine after a few minutes, so when the transmission is warmer. The oil is thiccer, making it harder to shift. You clutch disengages far enough, as if it wouldn't you'd hear some harsh grinding trying to put it in gear
The oil is probably too thicc due to cold weather, or maybe just too old. Providing the transmission with some new oil will probably fix your issue
Quite certain your clutch itself is fine
If it wasn't, you'd be grinding gear or you'd be noticing some slippage when accelerating
