11400F is better, don't think you'll really need to use any of the 12th gen features/upgrade with budget rig. 11400F good enough and quite a bit ahead of 12100F [also assuming you know you need a GPU if you use the F series because the F are ones with no integrated graphics]

While I do not agree with apples policies and practices related to repairing and DIY rights, I will say that there is a legitimately significant concern with knockoff components which could be hazardous or cause the device to not match apple’s performance specs

Several years ago Apple had to find and stop via legal action several manufacturers of USB to 30 pin and then later USB to lightning chargers which could catch fire when plugged in.
