Double check that it's definitely on a cpu fan header, and that it's on the right cpu header as there's usually two- one for air coolers and one for AIOs

If your thermals are fine when your actually in windows it means your fans are fine- so the error could just be your mobo freaking out because it can't find which fan belongs to your cpu
