They’ll leave if they can’t access the only subs they visit. I think you’re severely underestimating the impact of large subs going dark. Not only have they lost advertising on huge swaths of the site, they’ve gone as far as losing data to analyze and sell to data brokers. Sure some users will find new reddits, some will depart to dig, and others will pull data from archives instead. I suspect a majority of Reddit’s users are similar to Linus said he does on WAN, and either don’t have an account at all or never log in. They probably just do something along the lines of Google search “{thing they want} + reddit” to get better results.
