couple things, check prices on sn850x since they go on sale once in a while for 2tb relatively inexpensive. maybe drop down to 1200w to save some money and get an h7 flow so that your isn't choked for air... h9 flow seems to be worse because it copies the o11 dynamic airflow config and h9 elite just has no airflow. Then maybe don't get an sm7b? unless you already have it. IMHO if you want a broadcast style mic, mv7x is the way to go

It depends on how those m.2 slots are wired against the amount of total pcie lanes that your chipset/cpu has. In most cases the uefi will sort itself out, and you should be fine doing what you described above, but just be wary that you may have to go into config and fiddle with pcie allocation options
