Wow, I've had this same feeling about Pokémon just making the same game every year as well. With sword/shield I finished the gyms in two days. Didn't even bother trying to complete the pokedex because it just felt too grindy to me

The last pokedex I finished was Ruby/Sapphire

1. Yes, the game is SUPPOSED to be emptier, so that you can catch mons everywhere, makes sense. You can't just put that in the same tier as Zelda, where you don't have anything to catch and fill a pokedex. Game Freak and Nintendo kinda shot themselves in the foot there by making 1,000 pokemon and needing a world where you can catch every mon to the point where you can't even implement all those pokemon in the game at once.

2. Lightning being ugly is fine, but that's also just your opinion. BOTW looking better is also just your opinion, but generally speaking BOTW doesn't really look better at all, and that is probably with purpose, because BoTW is not based on a modern timeline like Pokemon is. It literally makes sense for them to not have the best graphics possible, especially with game optimization in mind.

3. Correct, because Pokemon as it is only really got away from the 'You become 10 and start at town randomly kek' scenario at like Gen 5, when they realized they couldn't just continue hitting out the exact same game every time and started adding Pokemon from older Generations immediately. Pokemon is supposed to be the same game every time, because the entire reason Pokemon still sells is because of a nostalgia factor.

It actually pissed a lot of people off that Game Freak went ahead and added older generations because people all wanted that sweet sweet nostalgia
