quartz (specifically quartz compositor) would be the "windowing API", which does happen to use the PDF imaging model but this is not the same thing as the UI being a PDF - again, you can decompile the bundles and see for yourself that it very much is not

I also have related issue with apple's opengl implementation, or lack thereof, and same lack thereof for VK
