I should experiment with iGPU vs dGPU display ports but my 5800x doesn't have an iGPU sooo...

But I have had experience with adding a second card just to get more display outputs. For context I was using Linux and all of the GPUs used were AMD/Intel.

There was no real disadvantage by using a display port from a second source, the latency is undetectable, in the nanoseconds. Linux would just use the Direct Rendering Infrastructure to select which graphics card to render the games, desktop environment, whatever.
