Wanting a fast SSD is valid, question is whether a different high end config (MAP1602/E18/E25/etc) or a different E26 drive would work too.
Just note that the benefit is primarily for project files and is basically non-existent for windows n stuff.

CPU:
Valid point. Consider 14700k too. Why not 7th gen Ryzen?

PSU:
Model is far more important than brand. The two reasons that brand is important are warranty and customer support (for other hardware, it'd be update support too but that doesn't apply for PSUs).
I recommend you consider other brands too and just get the least expensive PSU with good build quality and enough wattage.
Sadly, the cultists list and source sheet are hella outdated by now, so it's more effort to check.
Could also consider getting one with native 12VHPWR so you save yourself the adapter shenanigans.

GPU:
The market is hella fucked rn (idk how much is noticeable in Finland tho), but if it's just a placeholder anyway, I suggest getting smth from the used market instead.

Dude was training a very VRAM heavy AI model, so AMD and Intel were out of the picture. 4070 might've been doable with the budget, but the performance gain according to some redditor's benchmarks (the only ones I could find) was surprisingly small and didn't justify the $120+ price gap
