Big animals didn't dodge attacks by behavior and even if they did - it should be harder to dodge with big body mass. And logically, big target is simply easier to hit. So I think it should be for example -5 for large and -10 for gigantic by default with slight variation depending on certain species.

Having a quick look at the wiki it seems that many of the enemies already have negative dodge chances

Perhaps you talking about bosses/minibosses. Bosses are unique/fantasy enemies with unique stats and dev's could imagine about them whatever they want, but gladly, many of them really have negative dodge, what looks logical. Although, I'm talking about regular beasts/animals in the first place. There only troll have negative dodge, bear and bison have zero, and moose have positive. Troll is also fantasy creature, so I wouldn't complain much if he had zero or even positive dodge. But bear, bison and moose are real, and they didn't dodge - they just attack straightforward or run away. It's not a cat, to count on agility - they count on their thickness, durability and pure strength. And because they are big targets - they should be easier to hit (if you can afford yourself to try).
