to dix that the trains would need to notice "hey,i can't go to that depot,maybe i should look for another one"

You need separate track just like how you make the entry/exit to the depot,yes each of the depo required own entry and exit,pro tip: dont use single tile curve,use 2 tile one, because train would slow down in tight curve.
