You need someone to lead and organize the defence. It can be a CB or even the goalkeeper. But someone with leadership ability and good game reading needs to do that.
Tbh the CB role has changed a lot in 10 years. The skillset a center back needs to play in a low block team is very different from the one a CB needs to play in a high defensive line team. And not to mention there are some defender who looks much better in three man backline compared to 2 center back.
Being a center back of a high defensive line team, in a two man defence is very hard. And only few can do it properly.
