if you have a heavy roll, unequip the shield until you can wear it with a medium roll and put determination on the sword, that's what I used

some of them are just very quick

like bloodhound, him crouching and dashing indicates he's usually going to attack

when he dashes to you dodge into his body, you'll get the timing eventually and then you can hit him immediately then dodge out

he can also do a drag attack, run towards him and dodge as soon as you get close, he'll attack very quickly and either has a landing cooldown or another attack you can react to
