So, on lab you can rank up a creature if you get enough cells for it. Ranking it up let's you level it up past level 100, up to 150 at rank 5 I do believe. Apart from that, apparently in mythic era it unlocks extra stuff like talents.
Oh, and sometimes you unlock extra skills with levels past 100
