You might be able to use a VM of windows 7 (IDK how well the USB mappings are).

I was scrolling through it for ages

And couldn't find a single tweak for my iDevice

I have tried to bypass the "No Sim installed" screen on my iphone 3g but it will not work. I have tried redsn0w and it said that the ipsw is not supported??
I just wanted to do this as a silly lil project but it is becoming a nightmare!

assuming you're on 6.1.6 you need to use a 6.0 IPSW

to have a successful jailbreak, find a computer still running windows 7, install iTunes 11.0 and then try to jailbreak it
