I cannot use certain apps on my phone now because they instantly crash like when i was jailbroken

best would copy all data to pc but not as backup, then restore and copy back

As stated above, your contacts, photos, notes, etc is synced with your iCloud account, but you cannot restore a backup that you made while jailbroken otherwise you’ll have the same result cause the jailbreak files are still in your /var directory and that’s what iTunes backs up to.
You will keep all game data, etc through your AppleID too and your passwords, safari history, etc aswell
