right now iam on ios14.8 on my iPhone 11 with the unc0ver JB.
I'd like to renew my jailbreak and set up my phone newly.
What can i do to keep my JB and set my phone to manufacture status ?

Restore rootfs with u0 and then reset all data and settings

It wont update as long as you dont use a backup. Using a backup might prompt you to update
