To block OTA updates, you can install a modified tvOS beta profile. This works even without a jailbreak. Note that the profile expires and will stop blocking updates on <t:1738299600:D> (<t:1738299600:R>).

If you are met with an error trying to install the profile after <t:1702530000:D>, you can get around this by setting your device’s date back to a point before <t:1702530000:D> and trying to install the profile again, after it is installed you can set your device’s time back to normal and it will continue blocking updates until the scheduled expiration date.

You can re-enable updates by uninstalling this profile in Settings -> General -> Profiles & Device Management.

If you're jailbroken, you can also install the OTADisabler tweak instead, but note that it is harder to remove while unjailbroken.

Make sure you delete the youtube and reinstall it fresh after update.

the only reason is many apps later on asks for ios 17+ needed like how they usually ask 15+ now, so can be annoying if that happens

If app compatibility is your concern, 17.0 gives better app compatibility long-term, if we're speaking years into the future.
See pins for a guide with instructions how to maximize the chance that TrollStore will survive your upgrade. If it doesn't survive the upgrade, or you uninstall TrollStore before upgrading iOS, then you will have to wait for another install method to get TrollStore back.
Also remember that if you update to either of those versions, there is a high chance you will never be able to jailbreak again. Especially so for 17.0 because of the new SPTM protection mechanism

sideload any app normally with sideloadly/altstore/whatever (doesn't matter what you sideload), then at a certain point iOS will say developer mode has to be enabled, so you can go into settings and enable it

then you can delete the app you just sideloaded
