The way iOS is provisioned with signing means that if an iTunes version (i.e. 14.3) is not being signed it can not be installed.

Unless you have SHSH2 blobs on a currently compatible chip with FutureRestore you can't downgrade below iOS 14.4

i jailbroke with unc0ver 6.0 and when it finishes and says: now the device will reboot into a jailbroken state, it reboots but it isnt in a jailbroken state
