Flatpaks are overall seen as better.
Usually, the Snap criticisms are:

• slow (yes and no, see below)
• proprietary, centralized backend
• issues with theming/integration
• bloat (snapd running to set shit up and check for updates)
• sometimes auto updates (which cannot be turned off. Default? Makes sense, but unchangable??)

Regarding speed:
Snaps are downloaded as squashfs files, which gives them a notable disk space advantage..
However, they need to be initialized/mounted, which adds a delay on the first start.
How much, depends on your machine. Runtime performance isn't more affected than with flatpak (negligible)

My 2 cents: I use a few on my Desktop. (VSC Insiders, IntelliJ, smth I probably forgot)

Speed: eh my snap apps start slow anyway. +1s start time after boot, dunc are. Still mildly infuriating because it's a very fixable issue.
backend: I think it'd be nice if you could add repos, but whatever.
theming: works for things I use
bloat: don't care. snapd isn't a resource hog.
auto updates: don't mind for things I use, but the lack of an OPTION is weird.

Server-side, they're fine if you want things updated, an extra second on program startup after boot for something running 24/7 or potential theme problems are non-issues there.
