The way I would personally design it is the firewall on the server isn't concerned with traffic flows across the entire network system, only stuff like what services are available on the system

So I wouldn't usually make any firewall rules on my server that are based on source IP at all

In a business office environment I think you'd usually have the servers alone in their own vlan, then use routing to control access between stuff. But that can be expensive for routers (or L3 switches) to have to manage all that traffic at L3 instead of just over LAN
