Who got the best chocolate cookie recipe?!

Base Recipe - you need these ingredients and then add your choice of the options below
175g unsalted butter
200g dark brown, soft sugar
100g caster sugar
7.5ml vanilla paste/extract
1 large egg + 1 yolk
200g self raising flour
200g plain flour
Β½ tsp salt

Triple Chocolate Chunk:
Substitute 40g of plain flour with cocoa
50g chunked white chocolate
50g chunked dark chocolate
50g chunked milk chocolate

N.B. Chunks from a bar of baking chocolate work better than cheap chocolate chips.

White Chocolate Cranberry:
100g chunked white chocolate
100g cranberry

Chocolate Hazelnut:
80g chunked milk chocolate
40g chunked dark chocolate
80g hazelnut

Chocolate Orange:
60g chunked milk chocolate
60g chunked dark chocolate
Zest 2 large or 3 medium oranges OR approx Β½ tsp of orange oil

Coconut:
160g sweetened coconut
1-2 tbps desiccated coconut to coat exterior of cookies

Porridge Cookie:
Substitute 25g of butter with golden syrup
100g porridge oats
100g raisins/sultanas

Any other variation:
Add up to 200g of β€˜add-ins’ to the base recipe above. Anything above this and you may lose the brownie-like texture of the cookie. If using M&Ms or Smarties, it is best to either handmix these in carefully at the end, or manually press them into a shaped cookie - otherwise the shell will break.

Step 1 Melt butter until no lumps remain, and then mix with sugars for 2-3m or until dissolved. Allow to cool slightly.

Step 2 Mix in egg, yolk, and vanilla paste. If using flavouring oils, zests, or golden syrup, add these now.

Step 3 Add in flours and salt. If using cocoa, add to the flours at this stage.

Step 4 Mix roughly until there are no large pockets of flour remaining. It does not have to be mixed perfectly, as you will now add your dry ingredients and mix again, until fully incorporated.

Step 5 The dough is complete. Weigh it and divide into either 12 or 18 portions, approximately 90g or 60g each, respectively.

Step 6 Shape the balls of dough first into a ball, then flatten then gently - the end result is akin to a hockey puck. If baking coconut cookies, press the cookies into the desiccated coconut now.

Step 7 Cover the cookies well and refrigerate at this point for at least 2 hours, or ideally overnight. Don’t skip this stage or I will be very disappointed in you

Step 8 Place balls 5cm apart on baking sheet, and then bake with convection at 180ΒΊC for 10-11 minutes until edges are starting to brown.

Step 9 Cool on baking sheet for 2-3 minutes. This is important because it helps form the lower crust.

Step 10 Transfer to cooling rack until completely cooled. Cookies will seem VERY soft until they have started to cool. Don’t eat them for at least an hour after taking them out of the oven.
