Seriously, my entire life, they'd hit the hundreds or higher for 10 seconds, then dip into 20mb/s range or something

"just buy a better one" I'd be told - but I got top-of-the-line $$ drives multiple times over the last decade and a half, never seemed to matter (but the industrial/high endurance ones are worth it to help hedge against flash volatility)
