Another useful icon would be Theme Build, as many themebuilds have restrictions to build within the given theme, and may go so far as having builds restricted to certain areas or plots. Showcase doesn't quite fit because people can still freely build within the theme, but Sandbox doesn't fit as that implies no restrictions to what can be built.
Icon could be something that showcases a couple themes at once, like a castle and a rocketship, or a christmas tree and jack-o-lantern.

I agree with the above suggestions and I think we should have a fair few more categories ontop, but I also think being able to type in our own custom categories would be very useful for servers that either have created their own category (i.e. minigames that are a flexible format that others could replicate in a unique way)
I would also like the ability to select multiple categories at once, as some servers may fall under multiple categories, i.e. server networks or worlds split into different sections, such as brick vista which has a themed section where builds must conform to a specific theme and fit into the world and also dorms where players can create their own apartment of whatever they like.
also some servers may simply fit into two categories simultaneously, for example a showcase or sandbox may also encourage roleplay within the world.
I think its fine to have just one category per server. We have server titles and descriptions for further information. The icon should be an easy way to see what the primary theme/goal of the server is but shouldn't need to convey everything the server may offer
yeah. UI clutter is bad
If anything we should have server tags that people can search for. But keep the icon/main category just a single entry
