smooth tiles were a holdover from Blockland iirc, and yeah they've expressed wishes to get rid of them. i think it's just an annoying migration they haven't gone through with yet

iirc its a combination of bevelless bricks making the art style look worse and encouraging players to use their bricks efficiently and wanting players to be able to understand how something was built from a glance

if you really want to make pixel art without bevels it may be worth trying out the glow material

anyway so they want people to be smart with brick use and astetic glow works but falls short hmm

you can actually adjust the intensity of the glow material so that it's not super bright
