Why do you care about level so much? It’s a startup so if you want more responsibility, you likely be able to get it. When looking for your job after this, recruiters don’t put much emphasis on your last title, as it can vary so much company to company it becomes meaningless. Unless you are looking for a level upgrade strictly for higher pay, which is totally fair.

For sure, if you were mostly concerned about responsibilities, I’d talk to the recruiter about it and let them know exactly how you feel. You want autonomy over your work, ownership, etc. see what they have to say.
For a level upgrade for pay reasons.. I’d deploy standard negotiation tactics.

Yes, 3.5 yr exp is not uniform, eg Google loves to downlevel even if you are coming from other big techs
imo title isn't a huge deal to me, a TC bump is a TC bump, unless you're ambitious about your career and take it that seriously i guess. especially, i feel like getting downleveled will give you a lot of breathing room w/r/t learning the new stack as well. and if you really should be an sde 2, it'll show. feels better to kill it at sde 1 than just barely getting by as sde 2 in perf reviews.
if i was in your position with no other offers or interviews ongoing, i'd be hesitant to pushback but it shouldn't hurt to ask for more based on your current YoE. def focus on the equity portion given it's a startup.
I'd say number 1 you shouldn't worry too much about revealing stuff.

Get a recruiter imo. I think your job search fu isn't not what it could be all round.
It's all about best alternative. If you are solidly mid level and could get that elsewhere for more money, you may want to interview around. There's also nothing wrong with taking the down level for the comp increase, but the reasoning about not knowing that stack seems off to me. What do I know.
