If you're a hiring manager who reviews submitted applications on Indeed, do you ever see any applications where the candidate falls short of the requirements coded into the posting? On my side, Indeed will warn me that I'm missing the desired/required qualifications but gives me the option to submit anyway. Does it go to a separate queue for you I wonder?

You should rarely self select when it comes to applying for jobs
Just apply if you think you for the qualifications generally

Sooo.... If someone was motivated to learn enough to "passably" have 1 year of experience in the time between scheduling an interview and taking it, would you lie and say you had a year experience? Let's face it, some stuff you can grind out in a few days and be able to talk smart enough about, right?
Or just use LinkedIn / go to the company website and apply

i mean personally i use those sites as a search engine
not as a means to apply to jobs

same with linkedin
i literally never apply through linkedin
but its a great place to search for jobs, if that makes sense
