Hello I am baby culinarian with much to learn but today I made a chicken fettuccine alfredo (I guess tagliatelle alfredo technically) following a recipe from an FF14 cookbook (I need to justify the purchase to myself by actually using it)

preparing for new years dinner, got myself a sous vide kit and will do my best to perfect it until then
Sous Vide Steak with a beautiful sear, cooked to our liking with homemade peppersauce, beans in bacon coat, and airfried potato wedges :D
Okay andi just make me famished as fuck at 8.45
will try myself on different cuts + sous vide times over the coming weeks, specifically 2 more cuts today to see how they are doing

I’m not one for beef but damn that looks good
I eat it very rarely, and if I do its usually for a steak of my choice
meat in general rather rare, chicken is my go to
they had very good bite to it!
blanched them in some salt water + gave them an immediate icewater bath to stop the cooking / retain the colour
I just don’t like it because it’s the kind of meat you have to chew for 848383 years in order to swallow it
then its not prepared well :D
if its cooked through its tender
if you have a incredibly chewy steak then its either completely well done (read: a sock) or its just literally raw lol
a sous vide steak wont have that, you vacuumseal that bitch and have it in a temperature controlled waterbath for a few hours
so you have a perfectly temp'd steak that is first and foremost incredibly tender&juicy and also easy to eat lol
today I will be trying how tender it gets if I have it in the bath for ~4 hours lol

usually I'd have thrown it into the pan for some additional searing of the bacon, also to get some of the rendered fat onto the beans for additional flavour, but I was too lazy to do it (I spent several hours in the kitchen at that point and wanted to be done xd)
it holds the beans together and makes for a nice presentation tbh

for non-steakeaters: the meat is super pink, but it has been cooked through in a vacuumbath for ~4hours, so it only looks like it may be "raw", but its super juicy, tender, and very delicious
what is a vacuumbath?
meat is vacuumsealed
and placed in a waterbath
water is circulating and kept at a stable temperatur, in this case 52°C
its cooked like that for several hours, in my case 4, to retain the most juice possible and cook it through to your liking, making this thing incredibly tender and fall apart on its own almost pretty much
did you put one of the magnet spinners in for the circulation?

Minus the sauce (i fucked it this time LMFAO) this was the final practice try, and the actual full plate I will be serving on new years dinner
with "I fucked it" I meant that its not what I expected (used a different wine for cooking that made the taste vastly different to what i was used to)
I did however go the extra mile on some things like the mashed potato, putting it through a fine meshsieve to make sure its silky smooth
(i dont want to do that again that was super hard to do lmfao)
all in all, I'm very happy with the result, it tasted phenomenal (and more importantly very special which it should be) so im very excited to serve this to our new years guest
it surely has been a long journey of prepping but this was SO worth the long prepwork I've done so far lol
also @bold dock got to eat it and he liked it
