Actually just thought on,
If everyone is comfortable with character creation, starting at level 3 would be good.
And not like Curse of Strahd where it is tied to plot items, more just when i feel a significant chapter has been closed off.
‘Beaten the Chapter’ sort of thing.

4-6 sessions = a level up
But that also depends on story progress, and I’m fine with allowing yous to enjoy the time in game if it means a longer levelling pace. There are other fun rewards to give
