In the US -Completing open enrollment for people. It's a big stress for most people, but in reality a simple process.
Fantasy: also bakery/cafe
Reality: similar to Leia - handling bureaucracy and govt interaction for people to get them what they need/are entitled to.

I picture the cafés ya'll are talking about as the one from Legends & Lattes. I would frequent a cozy café and bakery like that every day.

The local rescues are getting so overwhelmed with animals one of them even said they're shutting down the rescue portion of their organization

But the reality is that it's an impossible business, no matter how good you are, the competition from automated production is too much.
I even saw it from my old boss. He knew his stuff, could make anything. But it was just him, his ship, and two apprentices, me included.

A tiny food stall!! I love cooking!! I specifically enjoy creating Southeast, Middle Easter, and Southern Asian Cuisine. I'm from the Philippines and I love incorporating spices from aforementioned cultures into our dishes. I think I'll only serve three fried dishes inspired by Thai batter I found online (but I've tweaked that it's become my own recipe), Filipino garlic fried rice (to which I add some cumin seeds and ginger paste which aren't common), and different sides. It's going to be wrapped in banana leaves and can be eaten by hand (I love eating by hand). I have a recipe for a toasted rice drink that I feel like would go so well with this and would be super refreshing especially with the weather here in the Philippines. Now I just need to make sure the prices are something that low income earners can afford because I want to be able to feed everyone especially minimum wage earners.
^ I actually already have the tools to start this now that I think about it. I also dream of being able to cook huge meals for homeless people so there's a path to it from that.
