I am not sure why I was having such a hard time with this question when the answer is, as it often is, Gundam.
Specifically Hathaway's Flash, I think.
My favorite Scifi book series would have to be:

Dune
The Expanse
anything written by Octavia Butler
The Murderbot Diaries
Red Rising series.

Saw someone mention Frankenstein and it's weird but I never consider that SciFi, but it definitely is.

I'm just like "those are old adventure books and a horror novel" including Frankenstein. But they all are, I think.
50k leagues is sci-fi? I've never heard a plot synopsis and assumed it was about someone/folks in a submarine or smth
I mean. All of them are fantasy but I guess Harry Potter and Percy Jackson aren't sci-fi unless you look at it through zoologist point of view.

I mean technically it does fall more under fantasy than sci-fi. But that argument is usually made by people who are comparing Star wars to Star Trek

In categorisation of movies, books etc. I vehemently oppose applying both scifi and fantasy to titles. It's a completely irrational pet peeve but drives me nuts
I think it's more fair to say that Star wars is a fantasy story told in a Sci-Fi setting
There was always a very gatekeepy, or at least there was, a very snobbish way of looking at TV and movie SciFi as lesser back in the day.

I don't read/watch much sci-fi so the pool to choose from is kinda small. That being said, Fringe (tv show), The Host (book), and Star Wars (movies)

I completely forgot about video games. Fallout and the Remedy Universe are some of my favorites. The Outer Worlds is another.

Outer Wilds has been on my Steam list forever but I keep getting distracted.
I adore the raypunk aesthetic of Outer Worlds, and the soundtrack is preem.

Mass Effect has/had so much potential and EA being in charge of it has fucked it up. I still love it tho.
Also Pikmin is kinda underrated as a Sci-Fi universe.
Mass Effect deserves a Resident Evil/FF7 remake. Not a half done remaster.

I love asimov's work but didnt get much out of the first few of the tv show
I guess Star Wars and Star Trek for visual media. For books I don't read much sci fi but I remember I really liked I, Robot when we read it in high school.
I like how the TV show fleshes out the empire more and we get to see imperial politics
All Tomorrow and Man After Man are good sci-fi stories about how the authors would imagine what humans would look like in the future.

For favourite sci-fi movie, Alien takes top spot for me. Mass Effect for video game, and Andor for tv.
