looking to start editing configuration.yaml according to docs, but "file editor" is not in the sidebar. running a new docker image on unraid.

"file editor" is not part of core. it is a separate app, however apps are not supported in a docker install.
you will have to set up an editor that edits the config files used by your container install. I am not sure on the specifics on where Unraid stores these things or how to give an editor access to them but that is what you will have to do.
