After discussion, this might be promoted to a feature request.

Why do I need to manually add each device to the energy dashboard? Is there anything I'm missing here?

It would be easier to just auto detect devices which meet the conditions and exclude the entities you've set up as your grid / solar / battery entities.
The dashboard already prevents you from adding any entities without the required device class / measurement / LTS.

Alternatively, even an entity glob would make things easier, for example all my plugs would be covered by "sensor.stekker*energy" and "sensor.stekker*power".

Currently when I onboard a new device I tend to forget to also onboard them to the energy dashboard.

so whilst the process could maybe be a bit smoother and the whole energy dashboard is getting worked on a lot at the moment so its likely smoothness will come... I don't agree with stuff being auto added. without adding context of if the device is source/consumption or if its got a parent device. and just because something has energy/power it doesn't necessarily mean people want it on the energy dashboard.

What I could get behind instead is an onboarding process that pops when you add a device that deals with power/energy that pops up and says: "do you want to add this to energy dashboard?" "What is it?" "does it have a parent?" etc... which would make the process smoother.
