I have a lot of wyze switches in my HA and I think i want to explore having a smart home that can continue working without any internet connection (devices needing access to a server somewhere to function) and my mind went to MQTT, are there MQTT light switches on the market? That preferably involve little flashing or tinkering? Or is there a better protocol to solve my need of local-only devices?

You would be way better off with ZHA zigbee local stuff. or Zigbee2MQTT...
I'll look into that, I did see zwave switches but they were all just, way more expensive
