I'm looking to install Home assistant OS on a raspberry and Frigate as an addon (so it will run on the raspberry too). Will i be able to plug coral into the raspberry and make it work with frigate?

If by coral you mean Google’s EdgeTPU, that requires an out of tree driver as the compiler is not open source.

if you are using the USB coral then yes it is plug and play as the driver is included in the frigate image and loaded to the coral.
If you are using m.2 coral then it should also be easy as HA OS includes the coral driver
