Considering a Raspberri Pi 5 on Amazon Canada is around $200 CAD is it just better to get an intel NUC from Beelink and run HAOS on there instead? I heard people recommending getting an SSD for Raspberry pi anyways so might as well get a cheap NUC?

absolutely! a cheap nuc or similar device - or even a repurposed office pc or similar - will perform better than a pi and give you more options for expansion/storage to grow with your usage of HA.
