I've been trying to find an example that isnt either very old, or using micro, I'd much prefer using openwakeword for a number of reasons can anyone give me an example? I tried some of the old ones but nothing seems to work even with a built in wake word.

For the ESP32-S3-Box-3 and the prebuilt ESPHome firmware, you can select between on-device and in HA wakeword.
If I remember correctly, the Voice PE does not provide that select option by default (for now) and uses the on-device wakeword by default.
