Have you tried moving the virtual disk to a new virtual machine to see if it's the machine and not the disk? Or try to spin up a new VM and attach the disk to see if you can read it, if you can then you can snag the files - it will be slightly more painful than a restore but it will get you there with some effort.

I'm not sure what you can do if it is corrupted, have you looked to see if there are any recovery tools that can help? It's one of those things that when you get bit you learn to backup daily (I backup 3 times a day, 3 different ways, 2 different destinations lol)
